HELLO!  My name is Janice Armistead.

At the age of fifty-nine, after much sickness and many-many prayers for help with my condition(s), I was diagnosed with gluten intolerance.

 

My numerous visits to the doctor were endless, with varying symptoms: severe stomach problems, aching muscles and joints, continual sinus infections, burning and itching (inside and outside of my body), extreme physical weakness, and others too numerous to name.

Eventually, frequent doctor visits became an embarrassment, as the many different medications prescribed only helped temporarily. But now, years later, I can say that it was worth it all, not only because of the help I have received personally from so many wonderful people who have become precious friends, but also because of the priceless privilege to pass on helpful information to others who are waiting to get started with their new gluten-free lifestyle.

Now, I can spend the rest of my life helping others GET STARTED with a gluten-free lifestyle. Since discovering my problem with gluten, I have traveled an unbelievable journey, and am so grateful to know what caused so many of my health problems. If I can spare one person from becoming frustrated upon discovering their problem with gluten, it will be worth all of the effort. I want to show, through my downloads available in my ‘Gluten-Free Store’, how anyone can quickly learn about buying gluten-free supplies and immediately start cooking.

I have been relentlessly driven to develop a combination of gluten-free flours that that would allow my recipes to taste as close to normal as possible. Determined not to give up, I have thrown away batch after batch of prepared recipes. Through tiring and heartfelt efforts, I must say that on one occasion I felt the pains of despair. Willing to try one more time, I discovered I was out of two of the gluten-free flours I normally used in my mixture experiments. At that point, I decided to substitute with other gluten-free flours I had available.  After combining my new mixture of flours, I made a small batch of biscuits, which had never tasted the way I wanted. When the biscuits finished baking, I grabbed one for a taste test. Much to my surprise, they tasted great! When I ran to give my husband a bite, he said,”They really taste good!” From that moment on, I was unstoppable! And, the funny thing about the whole ordeal is that I later discovered the two flours, I though I was missing, was in the pantry the entire time.
